The art of true Neapolitan pizza handed down by the oldest pizzaiolo in Naples!

It is not uncommon to still find a master like Vincenzo Capasso at work, at Porta San Gennaro, along Via Foria. He’s going to be 90 next year and he works with his hands the mixture of real Neapolitan pizza, with all the energy he has, despite having passed the baton to his nephew Vincenzo Capasso, 30 years old. This pizzaiolo has a great experience but also an ancient and special face: he was chosen by John Turturro to play the boss Raffaele Cutolo in the film “Passion” and the master craftsman Marco Ferrigno to make a statue for the Neapolitan nativity scene. The dean of the Neapolitan pizzaioli spent his life in the restaurant opened in via Porta San Gennaro by his father in 1900. Naples cannot be visited without tasting the pizza of portfolio or the fried pizza of the Pizzeria of Ancient Capasso. The masto pizzaiolo Vincenzo began working in his father’s pizzeria when he was 9 years old. “His life has been completely dedicated to this and that is what he continues to do today, giving us invaluable advice”, says his nephew Vincenzo, 30, a pizzaiolo of new generation with his cousin Gaetano. In the pizzeria Capasso six generations of pizza makers have been formed: they have learned the steps that in 2017 have assigned to pizza the recognition of UNESCO’s cultural heritage. It is a fascinating sequence of handwork that includes the staglio (the dough loafs ready to be spread), ammaccatura (the first spread of pizza), the cornicione (the creation of the edge of the pizza that borders pizza and seasoning) and the schiaffo (the second slap with the pizza slapped on the workbench, made of marble sprinkled with flour).
